The kids wanted to make some cookies for Teacher’s Day so I dug out this recipe that I had copied down from a book some time ago. It was my first time using it and I was hoping the cookies turned out OK. The last recipe I used turned out more of a cake-like texture and not the crispy cookies that I was looking for.
Here are the cookies fresh out of the oven. They were crispy on the outside but still slightly soft on the inside. Totally yummy tasting but the next time I think I would make them smaller bit-size pieces so there would be less crumbs lost in the house while the kids ate !

Chunky Chocolate Chip Cookies
125g butter, soften
1 tsp vanilla extract
275g firmly packed light brown sugar
150g plain/all purpose flour
35g self raising flour
1/2 tsp bicarbonate of soda (baking soda)
35g cocoa powder
— I just add chocolate chips instead of the items listed below —
100g peanut m&m
70g mini m&m
75g milk chocolate melts
– Preheat over 180 degrees C
– Beat butter, extract, suagr and egg until smooth
– Stir in shifted dry ingradients
– Stir in all chocolates
– Drop level tablespoon of mixture about 5cm apart on greased tray
– Bake for 10 mins
– Cool cookies on tray for 5 mins before transferring to wire rack to cool
